The Purple Tree Collard (Brassica oleracea v. acephala) is a perennial green vegetable that provides an abundance of nutritious leaves all year round for several years. It is especially tasty in the winter and spring, when the leaves turn purple and become sweeter and more tender. The Purple Tree Collard is resilient, tolerating a range of soil and light conditions and requiring relatively little supplemental water once established. Summer irrigation will keep the leaves from getting tough during summer harvest, but in the autumn after the rains start and the nights turn cold, the leaves are at their best. Cook it like you would kale or collard greens.
